WILLOW FIRED, OVEN COOKED PIZZA
As the name implies “Off Shoot” is a branch of Croft36. The business idea was formed over 20 years ago but due to other commitments, it took until 2020 when we were able to save enough to commence building.
We started planting willow in the late 1990’s and it is the willow that is now pivotal to Off Shoot’s success. We planted between 3000 - 4000 cuttings on our croft, which we are now able to coppice and dry for firewood. This fuels our wood burning oven.
We are using the wood fired oven in a number of ways: bread, pizza, paella and stews. In fact, anything a conventional oven can do, the wood fired oven can just as well, if not better [with practice] .
During the winter of 2022 we are opening the doors of Off Shoot six days per week for lunchtime snacks such as filled savoury or sweet Butteries (Julie's take on a traditional Scottish pastry) local Langoustine or fish soups, and other baking. In the winter months, on Friday and Saturday evenings we are asking people to pre-book a takeaway Paella or Pizza.
We have exciting plans for the summer months to provide fresh, sustainably caught sea food and create mouthwatering dishes for you to enjoy! Details will be posted on social media.
